Young French Chef from Lyon welcomes you to a dinner sponsored by Dartagnan on the occasion of the launch of his catering and Chef career at Carte Blanche.

 

 

 

Vincent Tournayre is a young French Chef from Lyon, with obvious talent and unwavering motivation. After spending 10 years in the renowned kitchens of Chef Michel Roux and Daniel Boulud, Vincent has now opened his catering company and is the Chef at “Carte Blanche” in New York.

On this occasion, he has organized a 4 course dinner, sponsored by Danish.

MENU

Canapé Trio served with a Mojito Royal
Brunoise of zucchinis in the cream of curry powder and in the kernels of black sesame seeds
Salmon Rillettes and ginger confit on toast
Quail eggs and green peas in pods

St Jacques Grilled Scallops   
Crisp Chorizo, Provencial tomato fondue, Balsamic cream and bittercress

Glazed Duck Breast
Spring onions, White asparagus and Morels
Morels, shallot marmalade and thyme juice

Pineapple Tarte Tatin
Vanilla ice cream

$75 per person, payment in cash only.
